Shortbread Instructions

  1. Preheat oven to 325ºF.

  2. Crust:

  3. Grease a 9X13 cake pan, and line the bottom with parchment paper.

  4. Combine all ingredients in a food processor and process until it looks like sand.

  5. Press into the bottom of prepared pan.

  6. Bake until golden approximately 25 minutes.

Filling Instructions

  1. In bowl beat eggs.

  2. Add sugar and beat until pale and thickened.

  3. Add flour, baking powder, lemon juice and lemon rind.

  4. Blend until smooth.

  5. Pour filling over pre-prepared cookie crust.

  6. Place in oven and bake until filling is set, approximately 25 to 30 minutes.

  7. Remove from oven.

  8. Set pan on cooling rack and let completely cool.
